Looking for a good GF sugar cookie recipe that bakes up sturdy. I need to be able to ship them to a friend for her birthday and they will be a delicate shape - this was her request - University of Alabama script letter A. So far the ones I've tried have just fallen apart trying to work with them. I really want to do these for her because she is largely responsible for my cookie-ing, as she surprised me with a Kitchen-Aid mixer for my birthday this year. Any and all help, suggestions and experience are most appreciated. Thanks!

I used Fancy Flours No-Fail Sugar Cookie Recipe (http://www.fancyflours.com/pro...sic-recipes-and-tips) using Red Mills All-Purpose Gluten Free Flour Mix adding xanthan gum as directed on package with great results. The dough had a little bean-like aftertaste but after they were baked you couldn't tell the difference between my regular cookies and the gluten-free ones. Tasted great!

I was wondering if there is a recipe available for a good gluten-free cookie for those who do not live in the States? We do not have those mixes and some ingredients can be quite expensive. Can I just replace the flour with the almond meal?

I haven't tried baking gluten free, but have baked w almond meal and it does not behave like wheat flour at all. Maybe Kat from ibicci can help you as she is also in NZ.
