In an attempt to save time and my wrist from cutting out 20 dozen cookies with a round cookie cutter, I thought cutting square cookies with a straight edge on measured mat would be the cat's meow. Only one problem, I didn't happen to think that a 2 1/2 in. square cookie would use more dough than a 2 1/2 in. round cookie! Ugh...had to mix more cookie dough which was not time saving at all. Tip: Remember that squares use more dough than rounds!!

I did the algebra and if you are going to do squares instead of circles try this for a conversion guideline
if your circle cutter is 3 inches use a 2 5/8 inch square
for a 4 inch circle use a 3 1/2 inch square
for a 5 inch circle use a 4 3/8 inch square
you can go slightly smaller, but don't go bigger

Wow, this is great info. Thanks for sharing it. I'm a hobby baker and have no clue how much dough I need or what size cutters to use. I may have to print this one out.
