Hello. How long can I safely keep uncooked cookie dough in the fridge before baking?

The primary safety issue relates to eating raw cookie dough (food poisoning from salmonella in the eggs or other bacteria in the raw flour), so as long as the dough smells and looks fresh and has been handled/stored properly (no cross-contamination), it can be fine for a while. Every dough has different spoiling properties, but I like to bake mine within a few days once thawed. I'm sure it would be fine/safe longer, but that's just my practice.
Yes, it is not safe to eat cookie dough. Researches proves it very well. But cookie dough designed specifically for eating raw is made either from raw egg or from pasteurized egg and it is safe to eat.

Actually, raw unpasteurized eggs can carry salmonella, so it is not generally considered safe to eat raw dough made with raw eggs.
