I made royal icing and flooded all my cookies last night finishing at 2am. I was using the little bottles to flood. covered all the tips when finished and left the bottles on the counter overnight. This morning, the cookies were completely dry. I piped dots on my birthday candles and as they were drying, little holes (craters), appeared in my dots!!!    I've never had that problem before.

Is there something wrong with my icing?  Do I have to throw away all unused icing every time and make fresh the next day? Could it be the recipe? I add glycerine 1t and syrup 1T but That's always how I make it.

Why the tiny craters? What am I doing wrong? So sad. All my work ruined.

Hi, Cindi, This topic is very related to an existing forum all about cratering, which you can find here: http://cookieconnection.juliau...8#328650445008898248

I think that tiny craters in dots happen for all the same reasons that they happen in larger spaces, and that the answers under the above link will provide good guidance on this topic.

** I'm leaving this forum open (though there is already a very related one), so that people can address this particular type of cratering in small dots. Please do not address general cratering issues here though, but rather in the link above. Thanks.

You shouldn't have to throw out your icing and start over each day.  I often leave mine in the bottles overnight and it is fine.  It sounds like you might have had air bubbles....did you stir the icing thoroughly before piping your dots?  (I use a chopstick.)

Your cookies are probably not ruined, though -- most people won't be bothered by the little things that drive us crazy.  But depending on how many dots you have, you might be able to remove them and try again....I've done that on a couple of occasions.  Good luck!

I've had similar problems with small dots. You really need to remix your icing in the morning as it will have separated, which I think contributes to cratering. also I try drying the dots very quickly,  with a fan or others have suggested in the past a fan heater or heat gun. A thicker icing helps too I find.

Agreed. for just a few dollars, a craft heat gun, and the few seconds it takes to run it over each cookie are well worth it.
