So I opened my Etsy shop right before Thanksgiving and two days ago I got my first order. I was so excited...and then everything that could go wrong did. For some unknown reason, my cookies spread when they usually don't. (even chilled) Then I had overflow and shaky hand syndrome. To top all that off I ended up with craters in my eyes. So, I just gave out some truly terrible cookies. I've been having a nightmare of a time with RI this whole last month. Multiple batches had grease spots so I switched meringue powders, only to find CK very grainy (literally pulling grains of sugar out of the tip!). I also tried several different recipes, etc. I finally found LilaLoa's survey on butter bleed and followed her solution: which is, fans. I started working with a party planner that creates mock parties for photo shoots a few months ago. She actually ordered cookies for her son's birthday and paid, but said she had a photo shoot coming up and would like a donation. I donate cookies in exchange for professional photos and exposure.
